There are only a few things as irresistible as apple pie, and there are so many recipes and apple pie variations. We decided to keep it simple focusing on the main stars of this all-time favorite pie: apples and cinnamon.

The main reasons for always trying to keep my recipes as simple as possible are that 1) I love seeing you making all these cakes and dishes on your own, and 2) I like focusing on what matters. This is why I decided to keep this apple pie as basic as possible, but added a little extra to make it even more apple-y. This apple pie has a crisp and flaky pastry, while the filling with fresh apples and some additional applesauce is intense but not watery at all.
Also, it will only take you a few minutes to prepare the pastry for which you can also use other types of flour like kamut, coco or almond flour if you wish. In order to avoid using a lot of additional sugar, we used sweet red apples and added cinnamon and lemon juice to the apple cubes for the filling as well as to the slices for the topping.
Take your time to arrange the slices for the topping nicely. I can guarantee you that the spectacular topping will make this simple apple pie become a gorgeous eye-catcher! Enjoy the pie while still warm sprinkled with a little bit of superfine sugar; optionally add soft whipped cream.
Apple Pie with Applesauce

- 100g caster superfine sugar
- 200g plain all-purpose flour
- 1/2 tsp cinnamon
- 120g unsalted butter, chopped (alternative: margarine)
- FILLING:
- 2-3 apples, chopped
- 1 tsp cinnamon
- juice of 1/2 lemon
- 1 tsp finely grated lemon rind
- 150g applesauce
- optional: 20g caster superfine sugar
- TOPPING:
- 4-5 big apples cut in uniform slices
- 1-2 tsp cinnamon
- juice of 1 lemon
