Homemade Chocolate-Hazelnut Cookies

Cookies definitely make everything better!

Are you looking for an easy recipe for chocolate-hazelnut cookies that are soft and chewy but not too sweet? We’ve got you covered! Check out this recipe for the only chocolate cookies you’ll need in your life. Spoiler: you’ll have children and adults coming back for more!

These delicious chocolate-hazelnut cookies are almost cakes, with a lovely soft texture that melts in your mouth. With this recipe you’ll be able to prepare about 30 middle-sized cookies. If you prefer bigger cookies, go for it! Just make sure to take them out of the oven while they are still soft and let them cool on the baking sheet. This ensures they will still be soft after even a week of storage – if they last that long.

Life is better with fresh baked cookies.

These cookies are great as a sweet treat in between. Also, they are the perfect choice for your tea time in winter! In case you were thinking about what to do with 30+ cookies: they make an amazing edible present and will cheer up any of your friends and/or colleagues! Been there, done that! P.s.: If you are not only a cookie monster but also a big chocolate fan: Add some additional chocolate chips to the dough. And for all the hazelnut-fans out there: roast some hazelnuts in a pan and add them for some extra crunch. Any individual final touches to the recipe are more than welcome and possible and will make your cookies even better!

Homemade Chocolate-Hazelnut Cookies

Ingredients

  • 200g flour
  • 70g granulated sugar
  • 250g powdered sugar
  • 1x baking soda
  • 1x vanilla sugar
  • 25g sifted cocoa powder
  • 2 egg yolks
  • 170g butter (or margarine)
  • 100 ground hazelnuts

Instructions

  • Preheat the oven to 180 degrees Celsius. 
  • Prepare a baking tray with baking paper; put aside. 
  • Add all ingredients in a large bowl and stir the ingredients until everything is smooth. 
  • Form the dough into walnut-sized balls and set aside. 
  • Put max. 9 dough balls on the tray leaving enough space between them. 
  • Dip a fork into water and flatten each ball with it, making a crisscross pattern. 
  • Bake in a preheated 180 degrees C oven for about 12-15 minutes. 
  • Take the cookies out of the oven and let them cool on the baking sheet. 

Notes

*PRO TIP: Take the cookies out of the oven while they are still soft. Once they cool down they'll be perfectly chewy!
