Galette: France’s Take on Pizza

This recipe walks the line between savory and sweet and is perfect for a quick and easy dinner during the week. Check out this savory galette with pear and leek, fresh goat cheese, walnuts and rosemary! It’s prepared in only a few minutes and ready in less than half an hour. Ready, steady, roll, fold and bake!

I’m very much into sweet and savory quiche and galette. They are both some of my favorite feel-good food options. And while I love having a piece of a hearty quiche with some salad, lately I’ve been very much into galettes and love them for their simplicity. Also, they tend to be lighter which makes them the perfect option for a quick lunch or dinner. After trying some sweet options with fresh fruit and berries, I was looking for a recipe that would allow me to combine some of my favorite ingredients in autumn, such as leek and pear, combined with fresh goat cheese and walnuts for some crunchiness.

Boost Your Immune System!

This galette is full of some of the best Fall flavors! Leeks belong to the same family as onions, shallots, scallions, chives and garlic, but have a much milder, somewhat sweet flavor when cooked which makes them perfect for this savory galette. They are nutrient-dense, which means that they are low in calories yet very high in vitamins and minerals, being a good source of vitamin K1, vitamin C and manganese. They provide small amounts of copper, vitamin B6 and iron as well.

The fresh and creamy goat cheese is distinct in flavor and a hypoallergenic alternative for those allergic to cheese made from cow’s milk. By adding some walnuts to your galette you’ll not only benefit from their crunchiness. Walnuts also provide healthy fats, fiber, vitamins, minerals and are an excellent source of antioxidants. For the fruity note to this recipe I chose pears because their sweetness perfectly balances the intense flavors of the leek and goat cheese. At the same time, pears are super healthy and rich in folate, vitamin C, copper and potassium. With all these healthy ingredients, enjoying this galette will also be a little boost for your immune system!

A Galette Full of Fall Flavors

Sautéing the leek with crushed pepper flakes will give this savory-sweet galette just enough heat to keep each bite interesting, while adding some fresh aromatic rosemary will give it some more flavor. It will also go perfectly well with the sweetness of the pear. Enjoy this savory galette with a fresh mixed salad and a glass of white wine!

Savory Galette with Pear, Leek, Goat Cheese & Walnuts

Ingredients

  • 1x ready rolled round puff pastry (375g)
  • 1 middle sized pear
  • 1 leek
  • 1 tablespoon Dijon mustard
  • 1/2 cup walnuts
  • 200g fresh goat cheese
  • 1 cup heavy cream
  • fresh rosemary
  • salt & pepper

Instructions

PREPARATION 

  • Preheat the oven to 180 degrees Celsius. 
  • Prepare a baking tray with baking paper or butter, and put the ready rolled puff pastry on it.
  • Clean the leek and cut it into thin slices.
  • Clean the pear and cut it into thin slices. 
  • Combine the heavy cream and Dijon mustard in a bowl. 

FILLING 

  • Add some olive oil in a medium pan over medium-high heat.
  • Add the leek and rosemary, season with salt and pepper and cook, stirring often, until softened, for about 5 minutes. 
  • Add the heavy cream and mustard. Then cook until the mixture is thick, for about 3-4 minutes. 
  • Taste for seasoning and adjust if needed.
  • Let cool for about 10 minutes.

ASSEMBLY

  • Place the filling on the puff pastry.
  • Add the thin slices of pear, fresh goat cheese and walnuts. 
  • Sprinkle with a bit of salt, pepper and rosemary.
  • Bake at 180 degrees for 30-35 minutes or until pastry is golden.
  • Enjoy while still warm.
